In one of those incredible, small-world
coincidences, on our first morning at the beach we met a family from Bristol, VA -- just minutes from our family in
Kingsport. The dad told us about a guy who sells freshly caught jumbo shrimp for $5.50 a pound. So we had to check it out.
The shrimp were so great that we had multiple meals with them. The kitchen was pretty decent, but missing odd things: no measuring cup, whisk, or spatula. The
WiFi didn't make it to the golf villas, so I was flying blind without recipes. That said, I managed to make some tasty dishes, including:
- classic peel & eat boiled shrimp with beer and Old Bay
- grilled citrus herb shrimp
- garlic shrimp
- shrimp and creamy Gorgonzola grits
- shrimp salad with lemon bacon dressing
We also hit our favorite fish shop and butcher and got some great tuna, mussels that I cooked for Ward with garlic and white wine, and some tasty steaks and burgers. We only ate out three times (all lunches), but had a delicious week.
