I was going to make crab-stuffed shrimp, but Wegmans didn't have any large enough. When I checked Shop-Rite, they had very reasonable lobster tails. Driving home, I remembered reading about butter-poached lobster tail, so I jettisoned the crab stuffing and went online for a recipe. It came out amazingly, and really elevated an average-quality piece of seafood.
The souffle is a Barefoot Contessa recipe I've been wanting to make for ages. It turned out perfectly and was much easier than I expected.
